Making kimchi: step by step

Below are the key steps for making your own kimchi. You will, of course, learn the full recipes and tips during our workshop, but this gives you a good idea of ​​the process.

Preparing cabbage

Cut the cabbage and prepare it for salting.

Cabbage salts

Salt the cabbage and let it rest to draw out the moisture. Then wash it clean.

Making kimchi pasta

Make the spice paste using ingredients such as red chili pepper, onion, garlic, ginger, pear, and apple.

Mix everything together.

Mix the cabbage with the spice paste.

Fermenting

Let the kimchi ferment and discover how the flavor develops.

How long does kimchi need to ferment?

The fermentation time depends on the temperature and your personal taste. At room temperature, it usually takes 2 to 5 days. Afterward, place the kimchi in the refrigerator, where fermentation continues more slowly and the flavor develops further. You can store it for 2 to 3 months.
